Chicken Burritos

Everyone loves Mexican food, it’s healthy and tasty and eliminates hunger. So create a Mexican fiesta for yourself this lunch time with these delicious chicken burritos!

Ingredients

  • 2 grilled chicken breasts. Shredded.
  • ½ cup grated cheese
  • 1 avocado diced
  • A handful of chopped coriander chopped
  • 4 large tortillas
  • 1 tablespoon coconut oil.
  • Any spices or seasoning you wish to add, we like cumin, ground coriander & tex-mex seasoning.

Instructions

  1. Mix the shredded chicken, cheese, coriander, and the diced avocados together in a bowl. Add a little salt & pepper and any other spices.
  2. Lay a tortilla flat on a plate and add ¼ of the mixture, form a roll. Repeat the process for all four tortillas.
  3. Scoop 1 tablespoon of coconut oil into a heated pan.
  4. Place all four tortillas on the pan and cook for 2 minutes on medium- high heat.
  5. Flip on the other side and cook for another 2 minutes or until the burritos are golden in colour. Serve warm.

Feel free to get creative with this recipe, add in some more veggies like peppers or courgettes. Swap the chicken for beef or lamb and experiment with your spice rack.
