Salads are brilliant. Healthy and versatile and oh so tasty. They get a bad rap for being “rabbit food” but they can be as filling or as light as you like.
This one is a little bit adventurous but it is delicious, so give this AVOCADO FETA AND STRAWBERRY SALAD a try and prepare to be amazed.
Ingredients – For the salad
- Bag of peppery salad. (Get one that contains rocket, you can pick one up in any supermarket)
- Cherry Tomatoes
- Cucumber
- Feta Cheese
- Avocado – Squeeze lime over this after it’s chopped. It will keep it fresh, and taste amazing.
- Red Onion
- Strawberries
- 1/2 Hard boiled eggs (optional)
- Crutons (optional)
- Iberic/Parma Ham (Optional)
Chop all ingredients roughly on a board and place in a large bowl. Toss all ingredients together until well mixed. Place whatever size of portion you like into a container and keep in the fridge until you’re ready to eat it.
Add any extras you care for such as olives or anchovies or even a sprinkle of pinto beans or quinoa to bulk up your salad even more.
Ingredients – For the Dressing.
- Extra virgin olive oil
- Balsamic Vinegar
- Mustard (wholegrain or hot or both)
- Sea salt
- Black pepper
Place all ingredients in a small jar or container, hold the lid securely and shake vigorously until all ingredients have blended into a dressing. Keep the salad and dressing separate until just before you eat it to avoid a soggy salad.
