Blueberry Bagel French Toast with Cream Cheese Glaze

 
French Toast is such a delicious brunch and with the good weather, the temptation to have a leisurely weekend brunch in the garden is too much to resist.
 
So here is one of our absolute favourite brunch recipes for you to get your teeth into. This would also make a delicious snack for work, however they are yummy, so make plenty and be prepared to share.

 
You Will Need

    • 2 blueberry bagels (or whatever kind you want)
    • 1 egg
    • 2 tablespoons heavy cream (milk would also work)
    • 2 tablespoons brown sugar
    • 1 teaspoon vanilla
    • 1/4 teaspoon cinnamon
    • A few tablespoons of butter
    • Cream cheese glaze (recipe below)
    • Berries and powdered sugar for garnish (I used currants and mulberries)

Method

    • In a shallow dish, whisk together the egg, cream, brown sugar, vanilla, and cinnamon. Soak each half of a bagel in the mixture until you’ve soaked up as much as you can. Fry them in the butter on the stove on about medium heat. Top with cream cheese glaze, powdered sugar, and/or berries.

For the cream cheese glaze:

    • 1/4 cup cream cheese
    • 1/4 cup butter
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla
    • Mix all the ingredients and microwave for 45 seconds or until warm.
