Broccoli & Blue Cheese Soup

Blue cheese gets a tough time. Yes it has blue spots all over it, yes it is technically moulded, and there is no denying it makes the fridge stink. However, when paired with it’s equally smelly friend broccoli, it can make an absolutely delicious soup.

It’s probably the quickest soup ever to make as well as being rediculously tasty and inexspensive.

Ingredients

  •  2 White Onions
  • 3 cloves of garlic
  • 2 Heads of Broccoli
  • 1 chicken stock pot or cube
  • 50g of Blue Cheese (Or more if you like it stronger)

Method

  1. Dice the onions and garlic cloves and fry them in a little coconut oil.
  2. Chop the broccoli and add this once the onion and garlic are browned and tender.
  3. Make the Chicken stock up as directed ad add it to the pot.
  4. Turn the heat up and bring to the boil
  5. When veg has been cooked, remove from the heat and blitz with a hand blender
  6. Put the pot back on a low heat and add the cheese chopped into small chunks.
  7. Simmer for about 10/15 minutes, stirring regularly.
  8. Once the cheese has melted and infused into the soup season with salt & pepper to taste.
  9. Blitz again if necessary.

This soup can be stored in an air tight container in the fridge for up to 5 days, and is also suitable for freezing.
