We’ve all had the dilemma of what to bring for lunch. Sometimes we just need a little inspiration that breaks us away from the mundane and the not so healthy .
That sausage roll you love is dripping with grease, fat and salt, and those sandwiches from the deli are tasty but probably jam packed with mayo or other fatty ingredients.
So here’s what we’re suggesting.
SOUP – Soup is probably one of the most under rated lunch time solutions. It takes 20 minutes to make, if even that. It’s filling, nutritious and absolutely perfect for winter months. You can bring it with you and heat it up at work or you can keep it hot in a flask. It couldn’t be handier.
Here’s one of our favourites.
COURGETTE AND SMOKED BACON SOUP
Ingredients
- 2/3 large courgettes
- 4 smoky bacon medallions (or rashers with the fat trimmed)
- 2/3 handfuls of red split lentils
- Chicken stock cube/veg stock cube
- Black Pepper
- 2 White Onions
- 2 Garlic Cloves
Method
- Fry the garlic and onions in a little coconut oil until browned off and fragrant.
- Add chopped bacon.
- Once bacon the is cooked Add the chopped courgettes.
- Dilute stock cube/stock pot with hot water and add to the pot. Use as little or as much as you like depending on how thick you like your soup
- Boil for about 10 minutes with a lid.
- Add handfuls of lentils, this will thicken the soup so add more if you like your soup thick.
- Blitz in a blender or with a hand blender, whichever you find easiest.
- Season with salt and pepper to taste and serve.
