Chicken or salmon sesame noodles

This chicken or salmon sesame noodle dish sounds very exotic and very complicated but we promise its easy as pie and takes about 20 minutes. Its also tasty and again can be packed out with as many vegetables as you like, plus it’s a great source of protein.

Ingredients – for the salmon or chicken

  • Chicken Breast or Salmon Fillets
  •  2 tbsp of Honey
  • 2 tbsp of Balsamic Vinegar
  • 1 tbsp Sesame Oil
  • 1 tbsp of Sriracha or other hot sauce
  • Salt and Pepper

  1. Mix the Soy sauce, Balsamic, Sesame oil and hot sauce in a small bowl or cup
  2. Use a pastry brush to paint the chicken or salmon fillets with glaze.
  3. Season with salt and pepper to taste.
  4. Wrap in foil and bake at 200C for 20-30 mins until fully cooked

Ingredients – For the noodles

  • Rice or egg noodles
  • Soy Sauce
  • Hot sauce
  • 1-2 Tbsp on Sesame Oil
  • 1 chopped onion – red or white or both
  • Chopped Scallions/Spring Onions
  • Chopped mixed peppers
  • Mangetout
  • A handful of sesame seeds
  • Any other veg you want to add, e.g. pak choi, baby corn, carrots, spinach etc

Method

  1. Place the noodle portions in boiling water for 3-4 minutes until soft.
  2. Stirfry the all veg in a wok or large pan, starting with the onions and adding gradually.
  3. Once veg is cooked yet still crispy add the drained noodles.
  4. Add soy sauce, sesame oil and hot sauce to taste
  5. Stir fry until happy with the mixture.

You can serve your chicken or salmon on top of a bed of noodles or chop it up and mix it through the noodles. Sprinkle the dish with seasme seeds and a few scallions. Again these dishes can be eaten cold or hot, just be sure to ensure your food is piping hot when reheating.
