Omelettes make an amazing lunch. They’re filling, packed with protein and can come in so many amazing varieties. If made the night before they eaten cold, reheated in the microwave or even be put in a baguette to make the world’s best sandwich. The Spanish do this and trust us it’s incredible.
Ingredients
- 2-4 eggs depending how big you want your omelette
- A splash of milk
- Salt and pepper for seasoning
- Fillings – literally whatever you want. Our suggestions are, bacon, mushrooms, baby potatoes, spinach and onion.
Method
- Fry the all the filling ingredients in a little coconut oil, starting with the onion.
- Once all fillings are cooked whisk eggs, milk and seasoning together and pour into the pan.
- Let the eggs cook gently until cooked on the bottom.
- Once cooked, if you have the skills, flip your omelette. If not just place the pan under the grill until its cooked on the top. There is no shame in this, omelette flipping isn’t included in many skill sets.
One you’re sure your omelette is cooked all the way through serve hot or cold with some salad or even just a few sliced tomatoes like the image above.
