The Perfect Saturday Breakfast

Saturday breakfast usually ends up being more of a brunchy affair, but that’s the beauty of it. You have nowhere that you absolutely have to be, you can sleep until whatever time you want and you can spend a little longer on the most important meal of the day.

This breakfast, although being quite healthy and packed with nutrients, tastes and feels like a complete indulgence. It looks amazing and we can promise it’s worth the messy prep-time.

You Will Need (Per Person)

  • 2 Eggs
  • 2 Slices of Smoked Bacon
  • Half an Avocado
  • Half a Lime
  • 1 Teaspoon of Very Lazy Chilli
  • 1 Slice of Wholemeal Bread

Method

  • Bring a saucepan of water to the boil, add a few splashes of vinegar and crack the eggs into the pot. They will be perfectly poached, trust us.
  • Pop your bread in the toaster.
  • Put the bacon under the grill on a high heat, you want it nice and crispy.
  • Take the half of the avocado and mash with a fork.
  • Once mashed to the perfect consistency, squeeze in the juice of half a lime and the teaspoon of chilli. Mix together until all blended, season with salt & pepper.
  • Once the toast is ready, spread it with little butter and then spread on the mashed avocado mixture.
  • Once the bacon is crispy, pop the bacon on top of the avocado.
  • Make sure your eggs are cooked and scoop them out of the saucepan with a spoon.
  • If your eggs are soft, pop the yolk and season the egg with salt and pepper.

Serve and enjoy.
TOP TIP – A little hot sauce takes this breakfast to the next level.
