Spicy Chicken Quesadillas

Although they aren’t overly popular here in the North-West (although they should be) Quesadillas are quick, easy and delicious! They take a few minutes to make and can be eaten hot or cold.

This is one of our favourite fillings, we hope you like it!

Serves 1

INGREDIENTS

  • Shredded Roast Chicken
  • 2 tablespoons of hot sauce (add more, or less depending on how spicy you want your quesadillas)
  • 1 tablespoon sour cream
  • 1 cup shredded cheddar (use yellow, white or a mix of both, feel free to add more if you want)
  • Rapeseed oil or olive oil
  • 1 flour tortilla
  • A handful of chopped coriander

PREPARATION

1. In a large mixing bowl, combine chicken, hot sauce, sour cream, and cheese.
2. Heat 1 teaspoon olive oil in a large frying pan over medium heat, then lay a flour tortilla down in the pan.
3.Spoon some of the chicken/cheese mixture on just half of the tortilla in the pan. Sprinkle a some coriander leaves on top, then fold the tortilla in half.
4.Cook until the underside is lightly browned, about 2 minutes. Carefully flip the quesadilla and cook until both sides are lightly browned and the cheese is melted, about 2 minutes more.
5. Repeat with any remaining tortillas. To serve, cut each quesadilla into 4 wedges. Serve with a side salad and more sour cream and hot sauce, for dipping. Yum!
