This wrap features pretty much all the good things in this world: avocado, hummus, and chipotle peppers. Totally vegetarian and incredibly healthy. Throw in carrots, apple and radishes for crunch to create this great, quick and easy to make salad-in-a-wrap that will have you begging for more.
Ingredients
- 1 avocado, mashed
- 1/2 lemon, juiced
- 1 cup hummus
- 1-2 chipotle peppers
- 6 medium tortillas
- 2 cups sliced radishes
- 3 medium carrots, peeled, and cut into 4-inch matchsticks
- 1 apple chopped in to small cubes
- 1/4 lb baby gem lettuce
- 1/4 teaspoon salt
Method
- In a small mixing bowl, combine the avocado with 3/4 of the lemon juice and 1/4 teaspoon salt.
- In another small bowl, chop up the chipotle peppers and mix with the hummus.
- Lay your tortilla on a flat surface and spread a large spoonful of hummus over half the tortilla.
- Spread a spoonful of the avocado mixture over the other half.
- Place a handful of carrot sticks in the center, and sprinkle the apple and radishes on top.
- Add a few baby gem leaves.
- Fold in the top and bottom sides of the tortilla in the same way you would a burrito.
- Repeat with the remaining tortillas.
