Spicy Vegetable Hummus Wrap

This wrap features pretty much all the good things in this world: avocado, hummus, and chipotle peppers. Totally vegetarian and incredibly healthy.  Throw in carrots, apple and radishes for crunch to create this great, quick and easy to make salad-in-a-wrap that will have you begging for more.

Ingredients

  • 1 avocado, mashed
  • 1/2 lemon, juiced
  • 1 cup hummus
  • 1-2 chipotle peppers
  • 6 medium tortillas
  • 2 cups sliced radishes
  • 3 medium carrots, peeled, and cut into 4-inch matchsticks
  • 1 apple chopped in to small cubes
  • 1/4 lb baby gem lettuce
  • 1/4 teaspoon salt

Method

  1. In a small mixing bowl, combine the avocado with 3/4 of the lemon juice and 1/4 teaspoon salt.
  2. In another small bowl, chop up the chipotle peppers and mix with the hummus.
  3. Lay your tortilla on a flat surface and spread a large spoonful of hummus over half the tortilla.
  4. Spread a spoonful of the avocado mixture over the other half.
  5. Place a handful of carrot sticks in the center, and sprinkle the apple and radishes on top. 
  6. Add a few baby gem leaves.
  7. Fold in the top and bottom sides of the tortilla in the same way you would a burrito.
  8. Repeat with the remaining tortillas.
