Super Healthy Curry

Here at WeAreTyrone we are big fans of anything you can make a massive portion of and portion up for your work lunches or for dinners at home. Curries are probably one of the best examples of this, you can make it quickly and easily in one pot, so minimal washing, plus they can be as healthy or as indulgent as you like.

You will Need:

  • Your Meat of choice : Beef, Chicken or Prawns work best, or chickpeas or quorn if your vegetarian.
  • A red onion
  • A white onion
  • 2 garlic cloves, crushed
  • Your veg of choice – peppers, mushrooms, sugar-snap peas and baby corn all work very well.
  • A tin of chopped tomatoes
  • Yoghurt – Muller light Greek Style Coconut & Vanilla works well or 0% fat natural yogurt if you prefer.
  • 1 Stock Pot, either beef, chicken, fish or vegetable – depending on your meat of choice
  • Spices –  Our favourite spice mix is super easy and can be made at home. 1 tbsp of medium curry powder, 1 tsp of chilli powder, 1 tsp of garlic powder, 1 tsp of turmeric, 1 tsp of ground coriander, 1 tsp of salt.
  • OR you can used a few spoonfuls of your favourite curry paste.
  • A splash of brown malt vinegar (trust us, it’s delicious)

Method:

  1. Fry the chopped onions and garlic in a little coconut oil and a splash of water to release the flavours.
  2. Add your meat and stir-fry with the onions until cooked through. Add a splash of water here also, it will help keep the meat tender.
  3. Add the veg and stir-fry a little until they start to become softer.
  4. Put in your chopped tomatoes and stir gently, simmer for a few minutes.
  5. Stir in your spice mix or curry paste and allow to simmer for a further 5 minutes.
  6. Turn the heat down and add your yoghurt, stirring gently to prevent curdling.
  7. Add the splash of vinegar and simmer over very low heat, stirring continuously for a few minutes until all the ingredients have fused together and the desired consistency is reached.

Boil a big pot of rice and hey presto you have a filling, nutritious meal that can serve as a lunch or a dinner.

This keeps very well in the fridge or freezer in an air tight container, so you can make a few portions in containers, ready to grab and take to work for lunch.
