Great Work Lunches – Chilli Con Carne

Chilli is amazing, it’s tasty, versatile and the mexicans really through us a bone when they created this dish. Its spicy, full of flavour and can be packet out with as many veggies as you like. Plus its so so easy and you can serve it in so many ways.
Ingredients

  • 500g of lean/extra lean mince
  • 1 red onion
  • 1 white onion
  • 2 garlic cloves
  • 1-3 red chillies (depending on how spicy you want your chilli)
  • 1 beef stock cube/pot
  • 1/2 cartons or tins of chopped tomatoes. Feel free to use a variety with added garlic or herbs.
  • 1 can of red kidney beans
  • 1 tsp cumin
  • 1 tsp of sea salt
  • 1 tsp of chilli powder (mild or hot, whichever you prefer)
  • 1 tsp of cocoa powder
  • 1 tsp of ground coriander

Method

  1. Fry the onions, chilli and garlic together in a tiny bit of coconut oil.
  2. Add the mince and cook until brown.
  3. Add the carton of tinned tomatoes and add the stock cube or pot.
  4. Allow to simmer gently for about 5 miutes and stir
  5. Add all seasonings.
  6. Add kidney Beans.
  7. Allow to simmer again for about 20 minutes, with the occasional stir. Feel free to add more of whichever seasonings and spices you prefer. Everybody’s tastes are different. We love a good kick of Cumin.

Pack your chili with some rice, pre ccoked at home OR put it in a tortilla for a delicious wrap. Feel free to add toppings such as greated cheese, guacomole or a bit of sour cream or natural yogurt for a delicious and versatile lunch. These can be eaten hot or cold. Yum!
