Tuna has been a lunchtime staple for years. Loved and hated by many, it’s the Marmite of the sandwich filling world. But this is not your boring tuna sandwich, nor is it you generic tuna and pasta salad with mayonnaise.
These are our delicious tuna lettuce boats that will blow all of your other boring tuna based lunches completely out of the water.
It’s high in protein, low in fat and carbohydrates, it’s delicious and it’s cheap to make.
You will need
- Romaine Lettuce Hearts
- 1 Can of Tuna – In brine or sunflower oil, whichever you prefer.
- A few capers in brine
- A handful of cherry tomatoes
- 2 Spring Onions
- 1 Table Spoon of mayonnaise
- 1 Teaspoon of dijon mustard
- Juice of half a lemon
- salt & pepper
Method
- Drain the tuna and chop the spring onions and cherry tomatoes into small chunks.
- Mix the tuna together with the mayonnaise and mustard.
- Add the capers, tomatoes and spring onions.
- Squeeze in the juice of half a lemon and mix again
- Season with salt and pepper to taste.
*Top Tip* When you’re taking the mixture to work, keep the tuna and lettuce separate until you’re just about to eat it. It will keep your lettuce nice and crunchy.
