These sound really complicated but we promise you they are not. They can be as adventurous as you like or as plain as can be. It just depends on your own personal tastes. These fajitas can be made up of anything really, from chicken to prawns and can be enjoyed hot or cold, although they are delicious warm.
Ingredients
- 1 White Onions
- 1 Red Onion
- 1 Yellow Pepper
- 1 Red Pepper
- 1 Green Pepper
- Musrooms
- Seasame Oil (optional)
- 1 Meat of your choice (optional) our favourites are chicken, beef and prawn.
- Seasoning – you can use a spice mix from your local supermarket or make up your own. Spices such as Cumin, Cayenne Pepper and Paprika work really well.
Method
- Chop all you veg into strips for easy cooking and eating.
- Fry off the onions and your meat of choice if you’re using any until cooked through and slightly browned, stirring costantly.
- Add your peppers and any other veg you feel would be tasty, continuing to stir and toss the veg to prevent burning.
- Drizzle with some seasame oil, it adds a lovely nutty flavour
- Add in any seasoning that you would like, whether it be shop bought or home made.
- Stir gently until you are satisfied everything is cooked through and well seasoned. You want your veg to be slightly browned and wilted but not so much that it’s floppy and overcooked.
You can take this mixture to work in a tupperware box and heat it up in the microwave before serving it with some tortillas wraps. Sour Cream, salsa and guacamole make amazing accompaniments with fajitas, for an even tastier lunch.
