Peanut Butter Chicken

Work lunches can be boring with boring sandwich after boring sandwich, and with summer on the horizon, we find ourselves poking our head out of our hibernation cave.

Get ready to peel off the winter layers just in time for spring with this delicious recipe from The Body Coach, Mr Joe Wicks.

The social media sensation has taken the world by storm, with his cheeky chappy humour and his 15 second videos with healthy recipes that take 15 minutes to prepare. Couple this with the minimal effort required, some delicious food and a snappy hashtag #leanin15 and you’re onto a winner.

Here is one of our favourites, tried and tested in the WeAreTyrone office, with one staff member having this for lunch 3 days in a row! It’s high protein, low carb, easy as pie and tastes amazing!

Serves: 1

Time: 10-12 minutes 

Ingredients:

  • 1 tsp coconut oil
  • 1/2 red onion, chopped
  • 2 spring onions, chopped
  • 180g chicken breast, cubed
  • 1 red pepper, sliced
  • 50g baby corn
  • 50g mange tout
  • 1 tbsp of Organic peanut butter
  • A splash of soy sauce

Method:

1. Heat the coconut oil in a wok or pan and add the red onion and spring onions, frying for 2 minutes.
2. Add the chicken breast and cook until brown, about 3 minutes.
3. Add the red pepper, mange tout and baby corn and cook for a further 1 min.
4. Add the peanut butter & soy sauce to hot water, mix until smooth and then pour over chicken.
5. Cook on a high heat until the desired consistency.
6.Serve with brown rice.
